Expiration Dates.

If you can only imagine, for over two years, our life revolved around the date that Scott would be finished with his Master's program at Columbia. What this may have had to do with are a couple of different things.

A. It was part of our 8 year plan. I remember Scott's mom calling us while out with the girls watching Enchanted at the movie theatre (for the second time) and telling us that he had gotten a letter from Columbia (the only school that he had applied for at that point). We rushed home to the acceptance letter and that started the end to our original goal.

And

B. Expiration Dates. I'm sorry, I'm going to get all Jubie on you for a minute.
So Scott's parents were so cool to get us a two year food storage supply to bring with us when we moved. And coincidentally enough, most if the expiration dates for ALL of that food were two years of the current date. About the time that Scott would be finishing. I remember thinking, we will be completely done with schooling by the time this food expires...and it has been so wonderful to have. I have not had to schlep home a 10lb. bag of flour or sugar since we have moved out here! Now that is something to be thankful for, trust me. And, that Paisley is in LOVE with chicken noodle soup thanks to our supply...something I am very proud of being a chicken noodle soup lover myself.

Now that I only have maybe 3 lbs of dry beans, 1 sack of sugar and some canned chicken and tuna left, (yea, those are the two that would get eaten by me only if I were really hungry.) we may need to restock the storage, but I'm not in any hurry for a new expiration date or anything. (well, that's not all true!;)

We are enjoying our dates right now anyhow.


We bought this garlic during our first Costco trip after moving to the city. If you're from here, you know that Costco is a big deal, especially if you don't own a car. It finally expires tomorrow... and you know me and expired food...It was taking up way too much room in my half size refrigerator. Maybe I'll freeze the rest.
